Beware! Make sure your model is on the list!

I bought this for my chef's choice, thinking it would go with my model 620. There was a list of Chef's Choice models and the pictures looked exactly like mine so I ordered a blade. When it arrived I put it in the closet with my cutting machine. When I finally needed to cut the meat, I pulled out the blade to put it in the grinder and the center blade mount was different than the one I had. Needless to say I can't return it anymore! Please note before ordering!

Didn't know a non-serrated blade was better for this

I used the original serrated blade that came with the Chef's Choice 615 to cut meat; I didn't know a serrated blade was better for this. After switching to a non-serrated blade, my slices of meat are more even, smoother, and I don't have a large end cap that can't be sliced. So if you use a meat slicer, switch to this blade now! I spent 6 months slicing my meat with a bread blade. In summary, use a meat blade for . Cut. Meat.

Much better than a serrated edge

Much better than a serrated edge as the flesh will not tear. This is the one that should come with the slicer but I think they want you to spend the extra money on a nicer product so they give you a lousy serrated slicer blade. Dishonest or customer-centric business practices. The blade itself is perfect for cutting anything. I make a lot of cured and smoked meats, so I like it when it's cut without ridges. It just looks better. It slips right through. A very impressive blade to have in your…

Not suitable for jerky

I bought this serrated blade because I thought it would be better for cutting beef jerky. After a few servings, I replaced it with the serrated blade that came with the Chef's Choice slicer. The key to slicing meat for jerky is to lightly freeze the meat so it sets. This will prevent you from having a ragged, fibrous edge at the bottom of the incision. I have found that when I do this with this blade the meat bends slightly with the blade giving you an uneven cut. Also, the curve at the end of…

Produces great results, needs to be taken care of.

PROS: wafer-thin cuts, very sharp /// CONS: cleaning and maintenance, prone to rust This blade gets results! Wafer-thin chunks of meat that transform an ordinary sandwich into a work of art that will make you salivate. BUT. This blade requires maintenance and cleaning. WILL rust. You should use a food-safe lubricant for the teeth, which tend to get dirty. You must clean food immediately after use. I washed it and after a few minutes of washing there were rust/corrosion spots. I immediately…

Pros
  • Looks good
Cons
  • Something's wrong

Although Chef's Choice kitchen slicer models feature a serrated blade, they cut bread and some cheeses much better. than cutting meat products. The answer is a blade without a serration. And it does an excellent job. Easy to install and perfect for all 7" Chef's Choice slicers. This blade slices meat like butter. Much lighter than a serrated blade. For slicing meat for things like French sauce sandwiches or bacon, it's great for those thin slices. Likewise it is effective at slicing thicker…
