Excellent knife for light work

I work in a meat grinder and use this knife in my work. The grip is a bit uncomfortable for me. Because it's so light, it's also not suitable for heavier cuts. On the plus side, it holds a great edge and is great for lean cuts like entrails or tenderloin. I'm glad I bought it for some things but not so much for others. Probably a great knife for home use, but not for work.

Note the sharp angle on the handle

This is a very good knife, excellent steel, good edge, full shaft, feels good in the hand, well balanced, there is just one big problem. The blade goes back to the hilt and then ends with a sharp angle right on the hilt. There is no guard or protection from this corner. I myself have poked him a couple of times without negotiating. Just stitches how easy it is to fix a design flaw.

2nd time beautiful super sharp

have been using this knife for about a month now. The one I originally got wasn't spicy (hence the 4 star rating). However, the manufacturer immediately fixed the problem by sending a new knife free of charge. The new one is very sharp. I mainly use it for trimming meat before cooking and then slicing after cooking. It cuts through flesh like a hot knife through butter. I look forward to buying more of their knives.

It's amazing what a really sharp knife can do

Most of the knives people use are traded not cut/sliced. This is a really sharp knife, just as the manufacturer describes it. I've used this to cut roasted chicken and turkey around the holiday season. The meat just slid off the breast, drumsticks and drumsticks almost falling apart just by looking at it. The only thing to note is that it is so sharp that small bits of rib bone can come loose with the last slice.

Great knife fits knife sets

it is used for slicing and trimming roast beef and pork belly. lighter than I thought it would be, but it was razor sharp, had a great edge, and punched through flesh like butter. Very intimidating first few uses. The handle is amazing on this version and the chef's knife version. My only complaint is that the black finish is starting to show cut marks, not scratches, just black to dark gray scuffs. Definitely worth the money and I love the case!

Would like a little change

A nice razor sharp knife to add to my everyday work kit (6 year old novice butcher). Overall handling is great and it's light enough that 8 hours of cutting won't tire you out, but I do have one small gripe. There's nothing stopping your hand from slipping off the handle, and going from a smooth, beautiful handle to a razor-sharp edge has cut me once or twice. To counteract this, I cut a small piece of the included scabbard and glued it to the handle to act more or less as a cross. I would love

Great knife - Kitchen & Dining

I really like this knife so far. Use it for slicing and trimming rib roast and pork belly. Nice, razor-sharp knife that has complemented my daily work equipment (six-year-old butcher, novice butcher). Overall handling is great and it's light enough that 8 hours of cutting won't tire you out, but I do have one small gripe. Cool looks, sharp imperfect design

Bought to cut fish at an industrial level. The blade is incredibly sharp and the knife is very light. As cool as this knife is, I have a few complaints about it. Given that this is a zimiter knife, I figured this blade would be more durable. This blade is very flexible, like a filleting knife. The way the handle is attached to the knife makes it dangerous to bend in that area, like it will break with very little pressure on it.
