ULTRA-PREMIUM MATERIALS: Each Sasaki knife is produced utilizing cutting edge breakthrough technology and is precision forged from world famous 67 layered Japanese AUS-10 Steel. This incredibly durable stain and corrosion resistant material delivers incomparable performance. The addition of Molybdenum and Vanadium in AUS-10 steel dramatically increases wear resistance and edge retention. EXPERTLY CRAFTED BLADE: Each knife is expertly crafted using a multi-step process. First the blade is heated to over 1900 degrees F, and liquid nitrogen cooled to harden the steel to over 62 Rockwell hardness. Each blade is then tempered at 600 degrees F for two hours to reduce brittleness. Takumi knives are particularly notable for their beautiful, yet functional hammered design that creates small air pockets to reduce cutting friction and help prevent food from adhering to the blade. EXPERTLY CRAFTED HANDLE: The blade is hand mated to a full tang, triple riveted non-porous fiberglass handle which is exceptionally durable and provides a perfect weight balance. CHEF KNIFE THAT’S DISTINCTLY DESIGNED: The Sasaki Chef knife places all the power in your hands with an edge that’s sharpened at a 10°-15° per side, ensuring a razor sharp blade edge. Excellent carving knife

I've always been amazed at how many people grab a large 10 inch knife when trying to carve meat. This 8 inch knife is perfect for slicing roast, turkey or other meat. Matter. The blade is thin enough to go around bone and sharp enough to slice through meat with ease! The blade is very sharp! Excellent knife Santoku

I'm a fan of Santoku knives (Japanese for "Three Virtues") for cutting, slicing and chopping and I always buy Shun branded products. I also have a couple of Wüsthof chef's knives, but there's something about Japanese knives that keeps me coming back to them because they look so unique and are so much fun to cut. Unfortunately it looks too functional

At first glance this night is great. It comes in a unique locking sheath that allows you not to use a slot in the knife block, has a full shank and polished touch, and the blade itself is polished to a mirror finish. Unfortunately, I've found that when it comes time to actually use it, the manufacturer goes beyond superior quality and ease of use. Amazing workmanship

This is a beautiful knife, incredibly sharp and well balanced. The center of gravity is where the black inlay ends on the handle. It feels almost weightless in your hand. The blade is terribly sharp. I almost dropped it the first time I took it out of the sheath. Hold the handle and then press the latch on the shell. The release is on the side of the blade. I appreciate a good paring knife and this one is excellent. It's heavy, feels good in the hand and has a good balance. It is very sharp and perfectly cuts vegetables and even meat. The knife is Chinese, not Japanese. Don't let the packaging fool you.

If that doesn't bother you then don't worry, but if you're looking for a Japanese knife made in Japan using traditional Japanese methods, this isn't it. This is a Chinese knife made in China from Japanese steel and Japanese style packaging. The packaging really doesn't lie. It doesn't say anywhere that it was made in Japan, and it's marked (in the fine print) as made in China, but it seems pretty obvious that they're aiming to sell it as a Japanese knife.
