My husband loves this knife more than me!

It was a Christmas present, he wanted a "special" woodcarving knife. He has used it often and it feels good in his hand. I caught him in the kitchen holding him, cleaning him (even if he wasn't dirty) and just looking at him lovingly. It is strange. But he loves it, uses it all the time and has in fact bought other knives from this company.

My favorite carving knife.

I bought this knife to do what it was designed to do. I cut up a whole pork shoulder, a pork loin and a meat cut. The knife came with a razor sharp blade that holds up well even with a lot of fat that can dull quickly. I made a nice dent in the blade using it as a cleaver, but it's not a cleaver and it sharpened fairly well. If you want to cut meat, you need this knife in your set.

My favorite butcher knife

I used to be a professional butcher and this has always been my favorite knife. The wide blade makes it easy to get slices of the same thickness. Granton's Edge (small indentations) prevents meat and fat from sticking to the edge of the knife. This allows him to cut it like butter. The 10" length is fine for me as I mainly use it for venison now, but if you want to cut whole ribs or New York sirloin into steaks, the 12" length is better.

Top brand value for money

This is an excellent butcher knife. Great for the home cook in your family. The size is perfect for me. It's big enough but not too big. It slices through raw meat as smoothly as possible without the drag I often encounter from fat. I can highly recommend almost every Victoranox kitchen knife. This is my brand for chef's knives, butcher's knives, boning knives and paring knives. Buy them and you won't regret it. I love everything I could get so far.

Great knife for slicing raw cuts

I needed a new knife for slicing beef cuts so I came across a Victorinox Fibrox Pro butcher knife and got it. Wow, this knife is smooth (thanks to the Granton blade) - cuts through the entire fillet - a breeze! The blade of the knife is terribly sharp and allows clean cuts without much effort. Take a boneless lamb shank and dice it nice and easy for souvlaki skewers. I can put away my chef's knife and rely on this butcher knife to do the job better.

Handle different from the photo

I'm a butcher and all my knives I currently use are Victorinox but they don't have a Granton blade so I'm replacing them little by little. Victorinox is a great brand that is very commonly used in butcher shops. They can be a bit pricey but have a nice benefit if you make sure they're hardened and get the job done. Their grips leave a lot to be desired and can get a bit slippery if you let them stick together. It turned out that this knife had a different handle than shown in the photo, but…
