Nice little knife. on Paring Knife

My wife lost her favorite paring knife (probably thrown away by mistake) and needed a good replacement. That's all. The only bad news is that it cut my thumb pretty badly the first time I used it. This knife is really sharp! With all due caution (as with any knife), I recommend.

My all-purpose chef's knife!

This really sharp knife is ideal for slicing ginger, tomatoes, lemons and anything acidic as it is non-reactive and will not stain food. I have a carbon steel knife that I love too, but it reacts to acid. I have to be very careful that no raw meat or fish gets on the handle, because the handle must not get wet when washing. This new knife is maintenance free. It's a creative chef's dream.

The best paring knife I've ever had!

It's sharp and fits your hand perfectly. It doesn't have any of those huge grips I've come across lately, but instead it fits comfortably in the palm of my hand. I don't have tiny hands or anything (I wear large women's size gloves). And while I don't need it often, the Clippoint makes it easy to "pick out" "stains" on potatoes and the like. Sorry I'm not a chef, there's probably a special term for places like this.

Notable Wustoff brand knives and products.

I love Wustoff knives and scissors. I have steak knives, a carving knife, a paring knife or cleaver, and a large meat knife that's about 25 years old. In 1983 I bought a sixth of 3 paring knives in Germany. All were wonderful. The scissors are great and the bread and sandwich knife is awesome. I highly recommend Wustoff products. Very high quality and durable. I prefer not to wash my knives in the dishwasher.

Quality that paring knives don't have

I have owned this set of knives for over 20 years. I wanted to add some knives and a new pair of scissors. My set is very good and I've been trying to find a range of knives to match the existing ones. I was so disappointed when these scissors arrived. They don't open and close smoothly. The handle of the knife is narrow and flat. Uncomfortable to hold and I have small hands. I ended up buying a paring knife at the Harris Teeter grocery store and it's great! It has a good balance. CRAZY sharp knives

Pros: These knives are so sharp you could cut off your fingertip without even feeling it. Pretty incredible. Almost as sharp as a piece of glass. Ideal for cutting fruit, vegetables and fingertips. Cons: Not necessarily BAD, but the grips are very light. I personally prefer the knife handle to be a bit heavier, but that's just my opinion. Holds the edge well.

I bought these two 4 inch models and they are both great. I waited a few months to write a review because first I wanted to see how well the factory edge would hold up and how well it would sharpen. They held a factory edge as well or better than any knife I've ever used, and one of my kitchen knives is a classic Wusthof knife. Robust knife and scissors. Scissors break too easily.

Pro: The knife and the scissors are very well made and very sharp. The scissors are comfortable to hold and feel comfortable in the hand. They seem great for slicing meat into strips. The bottle opener on the handle is a nice addition. A small twin knife seems sturdy. This is the perfect size for easy trimming.
