I've been using this set for almost a month now and am very happy with it so far. This is a beautiful set and I love that there is a lid that can be used with any pot. The pans have a good weight and look very well made. However, it took some getting used to. I did a lot of research before replacing my old scratched teflon pans and for me it was stainless steel or cast iron. I knew these two options would require more maintenance than I was used to giving cookware. In the end I decided on this set made of stainless steel. I almost didn't order this set as some bad reviews said these pans burn everything regardless of the amount of oil/fat used and also the pans are discolored and/or have rust spots. Well, a few tips for those considering buying but unsure because of bad reviews: Wash your pans thoroughly to remove any remaining oils from the manufacturing process (I've read that this causes a rainbow color change after cooking leads). I washed mine thoroughly before cooking with it and I still get slight rainbow discoloration occasionally, but using simple distilled white vinegar with warm water and mild soap eliminates this. It's really amazing how well this works. In addition, these pans should always be preheated before adding oil/fat. This will prevent the food from sticking to the pan, but make sure the pan is not too hot before adding the oil. I use a gas range and find that medium to low cooking is actually the ideal amount of heat for most of the meals I cook. I sometimes have small stains on the bottom from cooked food, but this is easily removed by pouring some hot water into the saucepan and continuing to heat it on the stove, scraping gently with a spatula to soften, and then rinse with hot soapy water. I knew I had to learn how to cook something different than what I'm used to in order to get stainless. I also knew they would wash themselves more thoroughly, and I was prepared for that. If what I've described seems too time consuming, it may not be for you. I figured I'd get bored doing the extra washing steps when needed, but it's actually not necessary every time, and when needed it just adds a few minutes to my cleansing routine, so it's not a big deal. . deal with me I think it pays to have pans that don't leach toxins into my food like my old, scratched, Teflon-coated pans did.
