DALSTRONG Slicing Carving Knife AUS 10V Review

We were very impressed with the quality and performance of this knife. We had a great knife we got from Echo in the 70's but it ended up not doing the job anymore. It has a serrated edge and it is difficult to find a person who can sharpen such a knife well. We'll keep looking, but in the meantime this is a great knife that can REALLY thinly slice roast beef. It comes in a very nice case with a button to keep it from accidentally falling out. GOOD PRODUCT.

I've had this knife for a few months now and I've carved a turkey, sliced homemade bacon, sliced homemade jerky and brisket. It slides through everything like a lightsaber! I have been working as a chef/meat cutter at Ale House for several years now. Roast beef (Steamship +45lbs), ham and roast pork are hand carved so I have been using carving knives for many years and have 4-5 knives in my knife collection. A few weeks ago I ordered a Dalstrong Shogun 12 inch slicer for my son for his birthday. The knife is a very nice, serious slicer, but unfortunately it has a very slight curvature. in the blade. I bought this knife primarily for skinning fish and there are a few things this knife isn't good for: 1. The handle on this knife is too small so you It can't attach any real power to your Punch2. The knife has no edge. It also has a micro blade that makes sharpening difficult. You'll either have to grind that micro edge down or keep sharpening it until you hopefully do it well.
