For the Intermediate: Hand tool

Sharpening stones require precise skill and a keen eye. It's not something you just use like the edge smoothers you see in most restaurant kitchens. (a long metal stick you slide your knife back and forth on) ((most commonly and incorrectly called a knife sharpener)) This takes good practice and will ruin at least 2 or 3 of your good knives before you get it. Sharpening stones are the only way to get the perfect blade. Only buy if you are willing to put in the effort to use it. Otherwise, youโ€ฆ

  • Sturdy construction

Attention all kitchen knives

I have a variety of knife sharpening tools including Chef's Choice: Electric, Global, Ceramic, Japanese Whetstone and of course several whetstones. I ordered it because I thought I would have to send it back. When it arrived it looked like a set of whetstones in a twisting plastic case. I left it for a day and then tried it pessimistically. I poured some oil into the tray thinking it would use up all the oil I had so I just oiled each of the stones while using them. I've used all three stonesโ€ฆ

Pros
  • Beautiful design
Cons
  • Crumpled packaging

Good system, best for power tools and hand tools

This is the first knife sharpening system I've used but I'm very impressed. My knives got pretty dull and when I first experienced this I ran my knives through the grit many times, then to medium, then to fine. My knives are noticeably sharper, but not as sharp as I would like. I used my knives for a couple of weeks, then took them out and sharpened them again to medium and then to fine. Now my knives were pretty sharp. This system has a learning curve if you've never hand-sharpened a knifeโ€ฆ
