Probably the best knife I've ever used. (That's saying something coming from a tool fanatic who works as a contractor and carpenter.) Almost perfect, but not up to date.

At the time of writing this article I have had this knife for about a week. When I first picked it up, I was very impressed. It's a great tip to handle and much heavier than my 8" Wusthof chef's knife, which I really liked. I used it almost immediately to smash a bag of onions for french onion soup and it ripped them open with no problem. This is my first "professional" chef's knife, I wanted to treat myself to a quality knife and was very disappointed with the durability of the knife. Cuts like hot butter

I used a dull Cutco knife. The turning point came when I was cooking shrimp with grits and needed to dice the bacon, and Cutco reluctantly diced the bacon, but I got a nasty blister from gripping the knife so tightly trying to cut through all the fat.
